Veggie Burrito Bowls… with a Side of Regret

We thought this one was going to be an easy win: corn, tomatoes, guac, rice—what could go wrong?

Answer: the shallots. The aggressively spicy shallots.

We served her everything except the onions and spinach, but the flavor from those onions crept into the salsa and made the whole thing a bit too intense for our little taste tester. She was loving the tomatoes before dinner (like, popping them in her mouth like candy), but the second they touched that shallot-y salsa? Game over.

She wasn’t feeling the whole self-feeding vibe tonight either, so we had to bring out the Dancing Fork™. (If you know, you know.)

If we made this again, we’d set aside her portion of corn, tomatoes, and guac before anything got mixed. Maybe give her a little bit of the protein—but honestly, it felt a bit salty for her. Less pepper, less drama.

Would not call this a baby-friendly bowl, but with a few tweaks? Could be a comeback story.
