Baby-Approved Tofu (but Make It a Salad for the Adults)

Carb Smart Harissa-Honey Glazed Tofu with Lemony Bulgur

We had to get creative with this one. The HelloFresh plate looked beautiful but a little… petite for two grown adults who didn’t snack properly that afternoon. So we tossed it all over a bed of lettuce to make it a full meal—and honestly, it worked. The tofu glaze is a winner, especially when it soaks into the greens a little.

As for our little dining companion? She was into it! The tofu was the star of the show—sticky, soft, and just sweet enough. The feta cheese also mysteriously disappeared from her plate (as in, she inhaled it). Bulgur, though? Hard pass. Still not a fan of tiny grains, and honestly, fair enough. They’re tricky when you’re still mastering the pincer grip.

So final review:
✔ Tofu = hit
✔ Feta = hit
✔ Bulgur = “try again next time”
✔ Adults = needed more volume but the flavor combo was delicious

Leftovers went into our lunch containers with more lettuce and a little extra feta… because we’ve learned to plan ahead.
