But Have You Tried Pancakes?

There are a lot of things people say about babies. “They’ll eat anything at first.” “They’ll hate it today, love it tomorrow.” “Just wait until they discover carbs.”

Well, guess what? Roslyn just discovered carbs — and in our house, that means pancakes.

We use this simple, reliable recipe: Easy Pancakes on AllRecipes. Honestly, it’s the best we’ve found. No overthinking, no fancy ingredients, no fuss. Just classic, fluffy, golden-brown goodness that works for parents and baby alike.

Pancakes for Everyone

Saturday mornings have turned into pancake central at our place. My husband usually takes the lead in the kitchen (he’s the real chef around here), and we make a double batch of pancakes after our workouts. By the time the last pancake comes off the skillet, everyone’s ready to eat.

Here’s our setup:

  • Pancakes stacked high.
  • Frozen blueberries warmed into a juicy, all-natural syrup.
  • A swipe of crunchy, all-natural peanut butter.

That’s lunch — and it’s ridiculously good. Roslyn dives in with both hands. She LOVES the pancakes, adores the blueberries (they stain everything purple, but who cares?), and the peanut butter? Meh. She’ll pick at it, but it’s not her favorite.

Baby-Friendly Pancakes

One of the best things about this pancake recipe is how baby-friendly it is. No sugar overload, no strange ingredients. I’ll let a pancake cool, then hand it straight to Roslyn. She usually rips off little pieces herself, but sometimes she gets too eager and tries to eat it like a burger. That’s when I step in and help tear it into bite-sized bits.

But really, it’s so easy. Portable, handheld, not messy in a “banana slime” way. These pancakes have saved us on outings — I just cut one up, throw it in a container, and we’re good to go. Instant baby snack.

The Magic of the Toaster Pancake

Here’s my mom hack: pancakes in the toaster.

Breakfast? Toss a pancake in, add some fruit, done.
Dayhome snack? Toaster pancake + milk = instant win.

And here’s the kicker — there are two slots in a toaster. Which means Roslyn gets a pancake, and so do I. Parenting win.

Looking Ahead: Veggie Pancakes

Next week I’m going to get brave and sneak some extras into the batter. A little grated zucchini, some mashed sweet potato, maybe even a scoop of peanut butter. Will Roslyn notice? Who knows. But if she does, maybe I’ll just cover it with her beloved blueberries.

Because that’s the other lesson of baby meals: disguise is everything.

Pancake Phase: 13 Months

It’s funny — Roslyn didn’t care about pancakes until her 13th month. Before that, carbs weren’t even on her radar. Now? Pancakes are life. And honestly, I get it.

This recipe has officially become part of our weekly rotation. It’s quick, versatile, baby-approved, and adult-craveable. If you’re in a food rut, if you’re packing snacks on the go, or if you just need something to make Saturday mornings feel special…
