Spoiler alert: we had a tofu betrayal.
This HelloFresh recipe was originally a Dill Pickle Chicken Salad, but we went plant-based and swapped the chicken for tofu—usually a hit in our house. Usually.
We gave Roslyn:
- Cubed tofu
- Dill pickle cream (she was into it)
- Cherry tomatoes
- Chopped pickles
What didn’t make it to her plate:
- Spinach (not baby-friendly texture)
- Croutons (because we love her tiny gums)
Now here’s the twist—she did not like the tofu.
Was it the texture? Nope. This girl is a tofu stan.
It was the Applewood Smoke Spice Rub. Sneaky little villain. Way too spicy for baby taste buds (but delicious for adult taste buds – more for mommy!). If you’re making this at home for a little one, skip the rub entirely or season with something gentler like garlic or a dash of lemon.
Final verdict:
The dill cream was the real MVP. Tofu? Banished. We’ll try again another day—with less spice and fewer tears.
